São Jorge’s silhouette is a green ridge of pasture falling toward the sea. Cattle — mainly dairy — shape both landscape and economy: milk for São Jorge DOP cheese, beef, and a work rhythm tied to seasons and Atlantic weather.
High pasture and fajãs
At altitude, wind and humidity keep grass rich; on the fajãs, warmer ground supports vine, taro, coffee and vegetables in unique microclimates. Many families keep cattle on the plateau and a plot on the fajã — climbing and descending is part of life.
Cooperatives and craft
Dairies and cooperatives organise milk collection and cheese ageing. Herder and cheesemaker knowledge still passes between generations, even as emigration emptied houses and tourism brought new faces to the island.
